Spiced Coconut Yogurt Parfait with Cardamom & Chia Seeds
This delightful parfait offers a creamy, textured breakfast or snack option that adheres to Ayurvedic principles. It features cooling coconut yoghurt, warming spices, and fibre-rich chia seeds for a balanced and satisfying experience.
Ingredients:
1 cup plain full-fat coconut yoghurt
1/2 cup unsweetened shredded coconut flakes
1/4 cup granola (choose a sugar-free, nut-based granola for a more Ayurvedic option)
1 tablespoon chia seeds
1/4 teaspoon ground cardamom
Pinch of ground cinnamon (optional)
Honey or maple syrup to taste (optional)
Fresh mint leaves for garnish (optional)
Instructions:
Prep the Chia Seeds: In a small bowl, combine the chia seeds with a splash of water or milk (just enough to cover them). Let the chia seeds sit for 5-10 minutes, allowing them to absorb the liquid and become gel-like.
Spice Up Your Yogurt: In a separate bowl, whisk together the coconut yoghurt with the ground cardamom and a pinch of cinnamon (if using). Adjust the amount of cardamom to your preference – a little goes a long way!
