Traditional Mallorcan Easter Delights - Rubiols

As Easter approaches in the Balearic Islands, Mallorcan households are abuzz with preparations for one of the most cherished culinary delights of the season: Rubiols. These sweet or savory pastries, with their origins tracing back to medieval times, hold a special place in the hearts and palates of Mallorcans and Menorcans.
So what are Rubiols? Rubiols are delicate pastries, crafted from a thin layer of flour dough enriched with oil, butter, and egg. The dough is meticulously folded into a semicircular shape, encasing a delectable filling of cottage cheese, jam, or other sweet delights. This iconic pastry is a staple of the Christian Easter holidays, enjoyed as a symbol of tradition and celebration.

For the Dough:
500 g of loose or pastry flour
80 g icing sugar
1 egg yolk
250 g extra virgin olive oil
100 g orange juice
100 g of water
50 g butter at room temperature
The zest of half a lemon
For the Filling:
Cottage cheese
Strawberry or apricot jam
Nutella or Nocilla
Angel hair
Method:
Dough: Begin by combining the flour and icing sugar in a large mixing bowl, creating a well in the center. Into this well, pour the liquid ingredients: egg yolk, extra virgin olive oil, orange juice, water, room temperature butter, and lemon zest. Gradually incorporate the flour into the liquid mixture, stirring until a smooth dough forms. Transfer the dough onto a clean work surface and knead until it becomes pliable and free of lumps. Wrap the dough in plastic wrap and refrigerate for at least half an hour to allow it to rest.
Rubiols: Once the dough has rested, divide it into 12 equal portions. Roll out each portion into a thin circle and place a tablespoon of the desired filling in the centre. Moisten the edges of the dough with water, then fold the dough over the filling to form a semicircular shape. Press the edges firmly to seal the Rubiols and prevent the filling from leaking during baking. Trim any excess dough with a pastry cutter and place the Rubiols on a baking tray lined with parchment paper or a silicone mat. Bake in a preheated oven at 180°C for approximately 30 minutes, or until the pastries turn golden brown. Allow the Rubiols to cool before dusting them with icing sugar and serving.
